Henry Colbeck & Molino Iaquone are pleased to invite you to an exclusive event at the Head Quarters of Molino Iaquone, to meet the Iaquone family, tour their mill and participate in a Professional Pizza Masterclass. Come and make ‘authentic Italian digestible pizza’ at ‘La Casa Dell’ Impasto’ in Vicalvi (near Sora) equidistant between Rome & Naples airports. There are 2 ‘Masterclass’ sessions of a 3-hour duration (10.30am and 3.30pm) where you will be asked to arrive 15 minutes prior.


Masterclass Objectives:

Investigate what makes a fantastic pizza flour. Make dough and try baking with various oven types – flame, gas, electric, conventional static and revolving. Observe how natural processes can make pizzas ‘extra digestible and light’. Network with other Professional Pizza Operators, Suppliers & Manufacturers.

Masterclass Content:

Welcome, introductions & overview of the event & the Mission of Molino Iaquone. A guided tour of the flour mill & factory. Visit the on-site science lab to understand the tests carried out to ensure quality & consistency. An overview of the key variable factors in pizza making. Explore the Molino Iaquone product range.

Enjoy making pizza hands-on with the group. Discover what happens when flour, yeast, water & olive oil combine to ferment dough into doughballs & pizza bases. Bespoke your own pizza with a range of sauces & toppings, try different ovens,

and then enjoy what you’ve made!
